摘要
烘焙食品是人们日常生活中常见的食品之一,而食品添加剂在烘焙工艺中的应用已成为不可或缺的一部分.食品添加剂的使用旨在提高产品质量、延长保质期和改善口感,但其安全性引发了广泛关注.本文旨在对烘焙工艺中常用的食品添加剂及其安全评估进行系统综述,分析食品添加剂使用对烘焙食品品质和消费者健康的影响,探讨目前的安全评估方法和存在的问题,并提出相关的规范建议.
Abstract
Baking food is one of the common foods in people's daily lives,and the application of food additives in baking technology has become an indispensable part.The use of food additives aims to improve product quality,extend shelf life,and improve taste,but their safety has attracted widespread attention.This article aims to provide a systematic review of commonly used food additives and their safety assessments in baking processes,analyze the impact of food additive use on the quality of baked goods and consumer health,explore current safety assessment methods and existing problems,and propose relevant regulatory recommendations.
