摘要
亚硫酸盐是一种非常常见的食品添加剂,在食品的防腐、抗菌和抗氧化方面起着非常重要的作用.但如果人体摄入添加过量的亚硫酸盐,不仅会引起各种隐患疾病,还会增加致癌风险.因此,寻找快速安全可靠的方法检测食品中亚硫酸盐的含量,成为食品安全把关的重要手段.近年来针对各种食品中亚硫酸盐的荧光分析方法已经建立.本文综述了荧光探针技术检测食品中亚硫酸盐的研究进展.
Abstract
Sulfite is a very common food additive,which plays a very important role in the preservative,antibacterial and antioxidant aspects of food.However,if the human body ingests excessive sulfites,it can not only cause various hidden diseases,but also increase the risk of cancer.Finding a fast,safe and reliable method to detect the content of sulfites in food has become an important means of food safety control.In recent years,methods for fluorescence analysis of sulfites in various foods have been developed.The research progress of fluorescence probe technology for detecting sulfites in food was reviewed in this paper.
