Optimization of Fermentation Process of Kaili Rice Sour Soup
Using indica rice as sour soup fermentation substrate.The effects of fermentation temperature,the amount of old water and the amount of used amylase on the total acid content were conduct by single factor test and response surface analysis.The results showed that the best fermentation condition were:fermentation temperature 40℃,the older water content 30%,amylase content 0.55 mL·L-1.and total acid content of indica rice fermented acid soup 1.59 g·L-1.
