In food microbiological testing,the total number of colonies and coliforms are regarded as key indicators,which reveal the hygiene and safety of the food.This paper introduces the total number of colonies and the definition and differences of coliform groups,analyzes their influencing factors and determination methods,and puts forward prevention and control strategies,in order to provide reference for the detection and control of food microorganisms.
