摘要
甜菊糖苷是一种从甜叶菊中提取出来的天然甜味剂,具有耐热、稳定、无毒无害等特点,目前已被应用到食品行业中.甜菊糖苷代替蔗糖能够减少人体糖分的摄入,适合肥胖者和糖尿病患者食用,且甜菊糖苷具有一定的生物活性,可应用于医药等领域中.本文综述了甜菊糖苷在饮料、调味品以及酸奶等食品中的应用,介绍了甜菊糖苷的抗氧化、降血糖、降血压、抗肿瘤以及治疗失忆等生物活性,为甜菊糖苷以及甜叶菊的进一步开发利用提供了理论依据.
Abstract
Stevioside is a kind of natural sweetener extracted from Stevia rebaudiana,which has the characteristics of heat resistance,stability,non-toxic and harmless,and has been applied to the food industry.Instead of sucrose,stevioside can reduce the intake of sugar in the human body,which is suitable for obesity and diabetes patients.Moreover,stevioside has certain biological activity and can be used in medicine and other fields.In this paper,the application of stevioside in beverage,condiment,yogurt and other food was reviewed,and the biological activities of stevioside such as antioxidant,hypoglycemic,hypoglycemic,anti-tumor and anti-memory loss were introduced,which provided a theoretical basis for further development and utilization of stevioside and Stevia rebaudiana.
