速冻牛肉制品动物源性成分情况调查分析

摘要
为了探究市面上流通销售的速冻牛肉制品中动物源性成分情况,于广西壮族自治区梧州市各大型或小型超市随机购买 20 批次速冻牛肉制品,采用实时荧光PCR方法检测样品中猪、鸡、鸭、牛和羊 5 种动物源性成分,为市场监管部门开展速冻肉制品掺假、售假风险评估提供数据支持.结果显示,20 批次速冻牛肉制品中均检出牛源性成分,其中检出鸭源性成分 8 批次,检出猪、鸡、羊源性成分各 3 批次.这表明市售的速冻牛肉制品存在掺假情况,应加大对速冻肉制品市场的监管力度.
Abstract
To investigate the animal derived materials situation of quick-frozen beef products on the market,20 batches of quick-frozen beef products were randomly purchased from large or small supermarkets in Wuzhou city,Guangxi Zhuang Autonomous Region,they were detected by real-time PCR method for five animal derived materials including pig,chicken,duck,beef and goat,to provide data support for risk assessment of adulteration and sale quick-frozen meat products to the market supervision department.The results showed that beef derived material was detected in 20 batches,duck derived material was detected in 8 batches,pig,chicken and goat derived materials were separately detected in 3 batches.This shows that there is adulteration of frozen beef products on the market,and the supervision of quick-frozen meat products market should be strengthened.
