随着人们物质生活水平的不断提升,食品健康成为全社会讨论的焦点话题.食用油脂作为人们日常餐饮中必不可少的组成部分,其中的反式脂肪酸会对人体健康产生极大危害.因此,食用油脂加工中零反式脂肪酸控制技术备受关注.本研究对反式脂肪酸及氢化油的内涵进行了阐释,分析了反式脂肪酸的危害,并对零反式脂肪酸控制技术及应用进行了深入探究.
Research on Zero Trans Fatty Acid Control Technology in Edible Oil Processing
With the continuous improvement of people's material living standard,food health has become the focus of discussion in the whole society.Edible fats and oils,as an indispensable part of people's daily meals,contain trans fatty acids that can be extremely harmful to human health.Therefore,the control technology of zero trans fatty acids in edible oils and fats processing has attracted much attention.This paper explains the connotation of trans fatty acids and hydrogenated oil,analyzes the hazards of trans fatty acids,and conducts an in-depth investigation of zero trans fatty acids control technology and application.
