Application Ideas and Precautions of Nutrition Fortifier in Food Engineering
In this paper,the definition,purpose and classification of nutritional fortifier are described,and the application status of nutritional fortifier is reviewed from the aspects of market size,adding motivation and safety.Based on the relevant laws and regulations and nutrition requirements,the application ideas of appropriate,balanced and high quality were put forward,and the precautions for the use of nutritional fortifiers were put forward according to the factors of food processing stability and the compatibility of food matrix,aiming at providing reference suggestions for the rational use of nutritional fortifiers in food engineering.
