摘要

黄曲霉毒素M1(AFM1)作为黄曲霉毒素的一种代谢产物,主要存在于生鲜乳及各种乳制品中.它属于二氢呋喃杂萘邻酮衍生物,呈无色结晶性粉末状,有绿蓝色荧光,物理化学性质稳定,具有很强的致癌性,且当乳品经过高温消毒后仍无法完全去除该毒素[1].建立乳制品中黄曲霉毒素M1 的高灵敏度、快速检测技术,对保障乳制品质量安全及消费者健康具有重大意义.

Abstract

Aflatoxin M1(AFM1),as a metabolite of aflatoxin,mainly exists in fresh milk and various dairy products.It is a derivative of dihydrofuranazonaphone,which is colorless crystalline powder with green-blue fluorescence,stable physical and chemical properties,and has strong carcinogenicity.Moreover,the toxin cannot be completely removed after high-temperature disinfection of dairy products[1].The establishment of high sensitivity and rapid detection technology of aflatoxins M1 in dairy products is of great significance to ensure the quality and safety of dairy products and the health of consumers.
