Glycyrrhiza uralensis acid and flavonoids in licorice extract have good anti-corrosion and antioxidant properties,Glycyrrhiza uralensis acid is considered an ideal sweetener in food additives due to its high sweetness and low calorie advantages.This article evaluates the efficacy of licorice extract as a natural multifunctional food additive in food preservation,antioxidant,and sweetener enhancement,and analyzes its safety.The aim is to increase the application of natural food additives in food production and provide theoretical support for the safety and sustainable development of the food industry.
