Application of Pickering Emulsion Stabilized by Solid Particles in Food
With the improvement of consumers'demand for diversified functionalization of food and the improvement of their emphasis on food quality and safety,the application of Pickering emulsions in food has become a research hotspot due to their advantages such as good stability,no surfactants,and environmental friendliness.This paper summarizes the commonly used solid particles in Pickering emulsions,the factors affecting the stability of Pickering emulsions and the application of Pickering emulsions in food,in order to provide help for the development and utilization of Pickering emulsions.
