Through single factor and orthogonal test,the optimum process parameters of bergamot biscuit were determined as 20 g bergamot,25 g frosting and 50 g butter.Under this parameter condition,the bergamot biscuit has a strong scent of bergamot and a rich aroma of butter,moderate sweetness,crisp and delicious.After 30 days of storage at 35℃,it was found that the acid value,peroxide value,total number of colonies,coliform and mold indexes of the bergamot biscuits were in line with the national standards.
