Abstract
The purpose of this paper is to discuss the detection technology of pesticide residues in food,and analyze the principle,characteristics,application and development trend of various technologies.The influence of pesticide residues on food safety was summarized,and the principle and application of mainstream detection techniques such as spectroscopy,chromatography,mass spectrometry,capillary electrophoresis and immunoassay were introduced in detail.The advantages and disadvantages of various techniques were compared and analyzed,and the improvement measures of pesticide residue detection techniques were discussed.
