摘要
本文综述了我国不同产区板栗的种植情况,对不同产区板栗的化学成分、营养价值及板栗中的抗氧化活性进行了分析对比.比较不同板栗品种之间的品质差异,最大限度地利用其品种优势,为板栗深加工、分等分级提供营养学参考,并为"名特优新"品牌建立和推广提供数据支撑,对板栗资源的开发利用及原产地保护具有重要意义.
Abstract
In this paper,the planting situation of chestnut in different producing areas in China was summarized,and the chemical composition,nutritional value and antioxidant activity of chestnut in different producing areas were analyzed and compared.Compare the quality differences among different chestnut varieties,make the best use of their variety advantages,provide nutritional reference for deep processing and grading of chestnut,and provide data support for the establishment and promotion of"famous and excellent new brands".It is of great significance to the development and utilization of chestnut resources and the protection of its origin.
