Extraction and Purification of Soybean Polysaccharides and Determination of Their Structure
Soybean polysaccharide is a water-soluble polysaccharide extracted from soya bean dregs,which has various biological activities such as emulsion stability,antioxidant,lipid-lowering,hypoglycemic,and regulation of gut microbiota.It is widely used in industries such as food,medicine,and healthcare.In this paper,aqueous phosphoric acid solution was used as a solvent to extract water-soluble soybean polysaccharides from soya bean dregs,orthogonal optimization was carried out on the basis of single factor experiment,and the purification and structure determination were conducted.The results showed that the optimum preparation conditions of water-soluble soybean polysaccharide were as follows the solid-liquid ratio was 1∶11,the pH value was 3.5~4.0,the extration time was 4 h,and the extraction temperature was 140℃.The purified soybean polysaccharide exhibited an amorphous structure,and its monosaccharide composition primarily consisted of galactose,rhamnose and arabinose,with an average molecular weight of 314.36 kDa.
