Research Progress on the Processing Technology of Honey Chaff-Fried Yam of Jianchang Faction
Yam is commonly used in Chinese medicine that can be used both as a drug and as food.It has the effects of promoting saliva lung health,tonifying the kidneys and astringing essence,tonifying the spleen and stomach.Freshly harvested yam contains high levels of water starch,making it prone to browning and difficult to store,thus requiring processing after harvest.This article summarizes the tools,excipients,and processes used in preparation of honey chaff-fried yam,a specialty drink of the Jianchang Faction,by reviewing the literature.It also proposes future research directions for the preparation of honey chaff-fried yam by the Jianchang Faction in order to standardize the preparation process of specialty drinks of the Jianchang Faction.
