摘要

随着社会物质生活水平的提升,与人类发展历史紧密相关的烘焙技术也在不断变革进步.近年来,以健康、高效和营养为名的高蛋白烘焙产品深受人们的喜爱与欢迎.本文在阐述烘焙产品中蛋白原料的基本概念及作用的基础上,对高蛋白烘焙产品中的主要蛋白原料进行总结分析,并进一步探索蛋白原料科学有效的应用方法.

Abstract

With the improvement of social material living standards,baking technology closely related to the history of human development is also constantly changing and improving.In recent years,high protein bakery products in the name of health,high efficiency and nutrition have been loved and welcomed by people.On the basis of explaining the basic concept and function of protein raw materials in baking products,this paper summarizes and analyzes the main protein raw materials in high-protein baking products,and further explores the scientific and effective application methods of protein raw materials.
