This article explores the application of HACCP system in the quality control of traditional bamboo noodle production.Through hazard analysis of each process in the traditional bamboo noodle production process,key control points and corresponding key limits are established.The application of HACCP system in production can effectively ensure the safety and quality of traditional bamboo noodle products.
