摘要

本文针对原料选择与预处理,分析了宁夏地区优质枸杞和南方特有风味咖啡豆的营养成分,并介绍了枸杞的清洗、消毒及低温真空冻干处理工艺,以及咖啡豆的烘焙技术,进一步探讨了枸杞精粉与速溶咖啡粉的混合调配原则.揭示了枸杞咖啡的基础营养组成,富含枸杞多糖、甜菜碱、氨基酸以及咖啡因和绿原酸等特有营养素,这些成分赋予了枸杞咖啡强大的抗氧化、降血脂、抗衰老和养颜美容等健康效益,同时还有助于增强免疫功能、改善视力、提升精神状态和生活品质.

Abstract

According to the selection and pretreatment of raw materials,the nutritional components of high-quality wolfberry and coffee beans with special flavor in Ningxia region were analyzed.The cleaning,disinfection and low temperature vacuum lyophilization of wolfberry were introduced,as well as the roasting technology of coffee beans.The mixing principle of wolfberry extract powder and instant coffee powder was further discussed.The basic nutritional composition of wolfberry coffee is revealed,which is rich in wolfberry polysaccharide,betaine,amino acids,and unique nutrients such as caffeine and chlorogenic acid.These components give wolfberry coffee powerful health benefits such as antioxidant,lipids,anti-aging,beauty and beauty,and also help to enhance immune function,improve vision,improve mental state and quality of life.
