本研究以速冻牛肝菌、腐乳和米线作为样本,用鼠伤寒沙门氏菌ATCC 14028 培养物作为污染源,利用沙门氏菌三糖铁、赖氨酸脱羧酶、蛋白胨水、尿素琼脂、氰化钾和血清学检测方法,验证空白、低水平污染、中水平污染及高水平污染样本中是否存在沙门氏菌.结果表明:不同食品种类、污染水平的沙门氏菌检测结果差异不显著,表明沙门氏菌检测技术可以应用于食品分析.
In this study,with quick-frozen boletus,fermented bean curd and rice noodles as samples,and salmonella typhimurium ATCC 14028 culture as the pollution source,use salmonella trisaccharide iron,lysine decarboxylase,peptone water,urea agar,potassium cyanide and serological detection methods to verify the presence of salmonella in the blank,low level pollution,medium level pollution and high level pollution samples.Conclusion:There is no significant difference in Salmonella detection results among different types of food and different levels of contamination,indicating that Salmonella detection technology can be applied to food analysis.
