In this study,the standard curve of biogenic amines was established by optimizing sample pretreatment and chromatographic conditions.The results showed that histamine,tyramine,humutine,psittamine,tryptamine,β-phenylethylamine,spermidine and spermidine showed a good linear relationship in the concentration range of 0.10~2 000 ng·mL-1,and the correlation coefficients were all above 0.995.The experimental results show that the average recovery of standard addition ranges from 76%~100%,and the relative standard deviation ranges from 1.5%~6.1%,indicating that the method has high accuracy and precision.In summary,the HPLC method developed in this study is suitable for rapid and accurate detection of bioamines in kimchi,and provides reliable technical support for safety assessment and quality control of kimchi.
