摘要

大豆分离蛋白具有营养丰富、性能稳定和成膜能力良好的特征,其抗菌膜的开发与应用在食品领域备受关注.本文对大豆分离蛋白抗菌膜的组成成分、制备方法以及在食品保鲜中的应用进行论述,并对其发展前景进行展望,以期为大豆分离蛋白抗菌膜的研究和应用提供参考依据.

Abstract

Soybean protein isolate has the advantages of rich nutrition,stable performance and good film formation ability,so the development and application of soybean protein isolate antibacterial film have received more and more attention in the food field.The composition,preparation method and application in food preservation of soybean protein isolate antimicrobial film are discussed,and its development prospect is prospected,in order to provide reference basis for research and application of soybean protein isolate antimicrobial film.
