To understand the contamination of ochratoxin A(OTA)in Chaoshan rice cakes,99 samples of Chaoshan rice cakes and their raw materials were selected.Enzyme linked immunosorbent assay(ELISA)test kit was used for initial screening,and the OTA content in Chaoshan rice cakes was determined using immunoaffinity chromatography purification high performance liquid chromatography(ICP-HPLC).The results showed that 32 OTA samples were detected by ELISA test kit,with a detection rate of 32.32％.The OTA content was determined by HPLC on the positive samples screened by ELISA test kit.The OTA detection concentrations in one red peach cake and two mouse shell cake samples were 0.58 μg·kg-1,0.17 μg·kg-1,and 0.48 μg·kg-1,respectively.Therefore,it is necessary to strengthen the attention to the OTA pollution status in Chaoshan cake products.
