不同发芽条件对大麦中植酸含量及植酸酶活力的影响

摘要
大麦发芽过程中,发芽温度、浸麦水pH值及浸麦水中金属离子的种类和含量是影响大麦中植酸含量及植酸酶活力的重要因素.实验发现,当发芽温度为16℃时,植酸酶较高温和低温发芽更早的被激活,其活力达到4.032 8 U/g(绝干),更加有利于植酸的分解;在浸麦水为中性条件下浸麦,植酸酶活力上升较快,植酸含量迅速下降;在浸麦期间添加Ca2+、Mg2和Fe3+等金属离子对植酸酶的活力有较大抑制作用.
Abstract
The key factors of germinating temperature, pH value of leaching water and the varieties and content of metal ions in leaching water in the process of barley sprout affected the content of phytic acid and the activities of phytase notably. Result showed that,at the germination temperature of 16X2 , phytase was activated earlier than higher or lower temperature, phytase activity reached to 4. 032 8 U/g dry base ,which was more conducive to the decomposition of phytic acid. When leaching water was under neutral conditions, phytase activity increased rapidly. Adding Ca2+ , Mg2+ , Fe3+ and other metal ions during leaching peried had a greater inhibitory effect on phytase activity.
