Effect of cold shock treatment on chilling injury and active oxygen metabolism of sweet potato
Sweet potatos were treated by 0 and 5℃ cold shock for 3,6,9,12 h,respectively,then stored in the refrigerator of 7℃,relative humidity of (85 ± 5)%.The quality and chilling injury situation were observed under the optimal cold shock treatment conditions for physiological indices.The results showed that the cold shock treatment in sweet potatos could effectively control the occurrence and development of chilling injury at low temperature during storage,increase free proline content and significantly inhibited the increase of cell membrane permeability.Cold shock for 9 h at 5℃ in sweet potato storage,effectively inhibited the rise ofO2-and H2O2 content,improved SOD,POD,APX activity,reduced the loss of CAT activity.It enhanced the scavenging free radical capacity,and effectively reduced the occurrence of chilling injury.
