Rice flavor is a kind of artificial flavor,the main component is 2-acetyl-1-pyrroline(2-AP).The national standard"Food safety national Standard Food additives use standard"(GB 2760-2014)clearly stipulates that"rice is not allowed to add food spices,flavors."This paper summarizes and analyzes the common pretreatment and detection methods of rice flavor in or-der to provide reference for practitioners and regulators.
