摘要

以MRS培养基培养植物乳杆菌,用单因素试验考察各谷氨酸钠、脱脂乳和蔗糖3种干燥保护剂对菌种存活率的影响,以响应面法试验得到干燥保护剂的最优配比,制得菌粉并测定其存活率.试验结果表明,干燥保护剂的最优配比为:谷氨酸钠6%、脱脂乳15%、蔗糖10%,干燥后植物乳杆菌存活率为89%.

Abstract

Initially,Lactobacillus plantarum was incubated in MRS agar medium.Subsequently,a single-factor test was per-formed to examine the effects of three drying protectants(sodium glutamate,skimmed milk,and sucrose)on strain survival rate.The drying protectants'optimal proportions were determined using response surface method before being applied to the probiotic powder preparation for subsequent survival rate determination.As illustrated by the test results,the optimal propor-tions for three drying protectants were 6%for sodium glutamate,15%for skimmed milk,and 10%for sucrose.The post-drying Lactobacillus plantarum powder had a survival rate of 89%.
