通过综述果蔬加工原料选择及预处理技术,对果蔬加工过程中的褐变及护色措施进行阐述,展望了果蔬加工的新趋势及其发展前景.
Abstract
The fruit and vegetable processing technology of raw materials selection and pretreatment is introduced.The browning of fruit and vegetable processing and color protection measures are analyzed.The new trends and development prospects of fruit and vegetable processing are described.
