As a traditional Chinese flavor food,rice wine has many health functions,such as harmonizing blood,promoting qi,promoting spirit,dispelling wind and removing dampness,strengthening muscles and bones.In order to analyze the research progress and hot spots of rice wine,from the perspective of bibliometrics,using VOSviewer software,based on a total of 603 papers published at home and abroad in the past 31 years,this paper makes a visual analysis from the direction of time,space and research hot spots.The results showed that domestic researches on rice wine showed a significant growth trend in 2019,and international literatures on rice wine showed a significant growth trend after 2020.At present,only domestic core authors gradually developed,and the research cooperation between them was relatively close,while foreign authors lacked cooperation and communication.In this field,China has the greatest influence and the most relevant research papers,followed by South Korea and Japan;the research focuses on flavor,the fermentation process,antioxidant activity and so on.In summary,combined with the knowledge graph,this paper is expected to provide reference for broadening the breadth and depth of rice wine research.
