Traditional Daqu quality indicators system includes sensory indicators (accounting for 60%weighting) and physio-chemical indica-tors. Basically, sensory indicators determines Daqu quality grade. However, new Daqu quality indicators system includes biochemical indica-tors, physiochemical indicators and sensory indicators (only accounting for 10%weighting). During the evaluation of Daqu quality grade, bio-chemical, physio-chemical and sensory indicators determine the quality of Daqu as a whole. In this study, the two systems were applied to eval-uate the same Daqu samples. Through comparative analysis of the difference between the indicators between traditional and new Daqu quality system and their evaluation performance in practice, it proved that new Daqu quality indicators system was more suitable for the evaluation of Daqu quality.
