摘要

白酒酿造与气候环境密切相关,优越的气候环境条件是生产优质白酒的重要因素之一.本文基于贵州镇远和仁怀1961-2022年7类气象数据,比较分析两地的气候环境条件.结果表明,镇远和仁怀气候温暖,年平均气温16 ℃左右,传统制曲时段(6-9月)平均最高气温30 ℃左右,超过30 ℃日数占比高;空气湿润,年平均降水量1000 mm左右,相对湿度终年维持在80%;日照较充足,年平均日照时数约为1200 h;风速低,平均风速为1~1.5m/s.气候温暖、湿润、日照充足、风速小是两地共同的气候特征,给白酒酿制创造了独特的外部气候环境.

Abstract

Baijiu production is closely related to climate and environment,and superior climate and environment conditions are the important factors for producing high-quality Baijiu.This paper is based on the seven types of meteorological data from Zhenyuan and Renhuai,Guizhou from 1961 to 2022,and compares and analyzes the climate and environment conditions of the two places.The re-sults show that the climate in Zhenyuan and Renhuai is warm,with an average annual temperature of around 16 ℃.The average high-est temperature during the traditional Daqu-making period(June to September)is around 30 ℃,with a high proportion of days ex-ceeding 30 ℃.The air is humid,with an average annual precipitation of around 1000 mm,and the relative humidity remains at 80%throughout the year.The sunshine is abundant,with an average annual sunshine duration of about 1200 h.The wind speed is low,with an average wind speed of 1 m/s to 1.5 m/s.Warm and humid climate,sufficient sunshine and low wind speed are the common climate characteristics of the two places,creating a unique climate environment for Baijiu production.
