摘要

米酒是我国传统发酵型酒精饮料,因营养价值高、口感好,还具特殊保健作用而深得大众喜爱,小到民间大到宫廷都有米酒"出没".因所用原料、酒曲、制作工艺不同,米酒风味品质及功能也不尽相同.本文将从米酒的原料、酒曲、食疗与保健功能进行总结,旨在为促进米酒的产业化发展和丰富米酒产品种类提供参考.

Abstract

Rice wine is a traditional fermented alcoholic beverage in China.It is popular among consumers for its high nutritional val-ue,good taste and special healthcare functions.Different raw materials,fermentation starters and production techniques would result in different flavor and functions of rice wine.This paper summarizes the raw materials,fermentation starters,and healthcare functions of rice wine,so as to provide reference for promoting the development of rice wine industry and enriching the variety of rice wine products.
