Rice wine is a traditional fermented alcoholic beverage in China.It is popular among consumers for its high nutritional val-ue,good taste and special healthcare functions.Different raw materials,fermentation starters and production techniques would result in different flavor and functions of rice wine.This paper summarizes the raw materials,fermentation starters,and healthcare functions of rice wine,so as to provide reference for promoting the development of rice wine industry and enriching the variety of rice wine products.
