Application of Trehalase in Liquid-State Fermentation of Baijiu
In order to evaluate the potential application value of trehalase in liquid-state fermentation of Baijiu,six trehalases(three originated from Pi-chia pastoris and three originated from Aspergillus niger)were added in the liquid-state fermentation test.The results showed that the performance of LD-40000 from Pichia pastoris and Thi-14 from Aspergillus niger was the best.Compared with the control group(DS=25),the trehalose and alcohol content of the mature fermented mash of LD-40000 decreased by 87.51%(P<0.01)and increased by 3.22%(P<0.01),respectively.Compared with the control group(DS=30),the trehalose and alcohol content of the mature fermented mash of Thi-14 decreased by 31.72%(P<0.01)and increased by 4.19%(P<0.01),respectively.The performance of trehalases from different strains showed significant differences(P<0.01).Mixing ratio and dosage of trehalase also had significant impact on its application effect(P<0.01).The application of trehalase presented little influence on the liquid-state fer-mentation process(P>0.05).In future research,it is necessary to screen high-quality trehalase and optimize the mixing ratio and dosage of trehalase used in liquid-state fermentation.
