Effect of Different Varieties of Peas on the Quality of Fengxiang Daqu
Peas,as one of the main raw materials of Fengxiang Daqu,have a significant impact on the quality of Fengxiang Daqu.In this study,six va-rieties of peas were used as the research objects,their physicochemical properties and water absorption characteristics were detected,and the quality of the Daqu produced from different varieties of peas were compared.The results showed that grey peas D8 and Y59 had high water absorption rate,high expansion rate,and high swelling property.The Daqu produced from D8 and Y59 had uniform mold on the surface,abundant bubbles and myceli-um on the cross section,and high saccharification,liquefaction,fermentation and esterification power,indicating outstanding quality.Correlation anal-ysis between pea quality and water absorption characteristics showed that the content of amylopectin and amino acids in peas were important factors affecting their water absorption characteristics.
