Differences in Aroma Composition of Wines from Different Grape Varieties from Jiaodong Peninsula
To study the differences in aroma composition of wines from different grape varieties from Jiaodong Peninsula of Shandong,headspace sol-id-phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS)was used to detect the aroma components and contents of Ries-ling,Chardonnay,Petit Manseng,Marselan and Petit Verdot wines produced in Jiaodong Peninsula.The results showed that Petit Verdot had the high-est total amount of aroma components,while Chardonnay had the lowest;Petit Manseng had the highest content of esters,while Marselan had the low-est;Petit Verdot had the highest content of higher alcohols,while Riesling had the lowest;Riesling had the highest content of fatty acids,while Petit Verdot had the lowest;Marselan had the highest content of terpenes,while Chardonnay had the lowest;Riesling had the highest content of aldehydes and ketones,while Petit Verdot had the lowest.The differences in total amount and contents of aroma components of wines from different grape variet-ies result in the differences in their aroma.
