摘要

随着我国进入发展新时期,白酒行业的发展向绿色、低碳、生态化转型,各大企业加大对白酒酿造副产物的资源化、效益化研究,能解决酿酒对环境的污染,又能带来良好经济效益.本文详细介绍了酒糟、黄水和窖皮泥副产物的成分、加工利用方式以及研究现状,以期促进白酒企业绿色循环低碳发展及全面转型和健康、稳定、持续高质量发展.

Abstract

As China enters a new period of development,the development of the Baijiu industry is transforming towards green,low-carbon and ecolog-ical development.Major distilleries are strengthening the research on the recycling of Baijiu by-products,which can solve the pollution problem and bring excellent economic benefits.This article reviews the research progress in the composition and processing technologies of by-products such as distillers grains,pit bottom water and pit mud,so as to promote the green and low-carbon development of Baijiu distilleries,and the healthy,stable,and sustainable development of Baijiu industry.
