Lujiu is a famous ethnic characteristic wine with a long history in China,and has a profound cultural heritage.The release of the association standard T/CBJ 9101-2021 has adjusted the concept of Lujiu,and has promoted its status.With the prevalence of the concept of big health,Lujiu has become favored by consumers,and has broad development prospect.This paper briefly describes the concept and classification of Lujiu,summarizes the research progress in the efficacy,functional component extraction,sterilization,turbidity removal,and flavor substances of Lujiu,and introduces the representative products and the common problems of Lujiu industry.This paper points out the development direction of Lujiu,so as to provide ref-erence for the development of new products,the quality improvement and the personalized flavor research of Lujiu.
