Research Progress in the Application of Electronic-Nose in Baijiu Industry
Electronic-nose is a mixed gas detection equipment based on bionics.It has the advantages of fast detection speed and low cost,and has been widely used in the fields of food,medical treatment,environment,etc.This paper introduces the definition and working procedure of electronic-nose,describes the classification and range of application of the sensors,reviews the application of electronic-nose in Baijiu industry,and analyzes the limitations of the electronic-nose technology and its future development direction,so as to provide a direction for the analysis of the flavor compo-nents and quality control of Baijiu.
