摘要

在传统的酿酒过程中,中国白酒酿造主要以人工为主.这种生产方式显然已经过时,它导致了过度的劳动强度和极低的效率,使得白酒行业的生产成本较高,不利于市场竞争,已经难以跟上时代的步伐,无法满足现代社会的需求,急需改变.为此,本文概述了传统白酒的酿造工艺流程,剖析了传统工艺面临的难题,介绍了中国白酒在机械化和现代化转型过程中的现状,并对白酒行业的未来发展路径进行了展望.

Abstract

In the traditional brewing process,Chinese Baijiu brewing is mainly manual.This mode of production has been seriously backward,labor intensity,low efficiency,making the production cost of liquor industry is high,not conducive to market competition.This mode of production has been difficult to adapt to the development of the times,the urgent need to change.To accomplish this,the present paper outlines the conventional method of liquor brewing,examines the prevalent issues in the traditional brewing techniques,and presents a synopsis of the present state of mechanization and modernization within the Chinese Baijiu industry,as well as an outlook on the direction of the development of Chinese Baijiu.
