Intelligent Brewing Technology for Chinese Baijiu and Future Prospects
In the traditional brewing process,Chinese Baijiu brewing is mainly manual.This mode of production has been seriously backward,labor intensity,low efficiency,making the production cost of liquor industry is high,not conducive to market competition.This mode of production has been difficult to adapt to the development of the times,the urgent need to change.To accomplish this,the present paper outlines the conventional method of liquor brewing,examines the prevalent issues in the traditional brewing techniques,and presents a synopsis of the present state of mechanization and modernization within the Chinese Baijiu industry,as well as an outlook on the direction of the development of Chinese Baijiu.
