白酒酿造温室气体在线监测设备研发及应用

采用综合气体冷凝除湿系统和红外气体传感器检测系统,联合智能云控平台,搭建了一套可实现对完整发酵周期中二氧化碳和甲烷浓度的动态监测的设备.该设备在窖池高温高湿环境中运行稳定,数据回传及时准确;发酵周期内,二氧化碳在发酵第 11 天达到峰值 38.05%vol,此后回落并稳定于 2%vol左右;甲烷含量缓慢上升,在发酵第127天达到峰值39.92%vol.本研究成果为有效控制白酒固态发酵中温室气体的产生和合理利用发酵废气实现节能减排提供了数据支撑.
Online Greenhouse Gas Monitoring Equipment Construction and Application for Fermentation of Baijiu
An integrated gas condensation and dehumidification system and infrared gas sensor detection system,combined with an intelligent cloud control platform,were used to build a set of equipment that can realize the dynamic monitoring of carbon dioxide and methane concentrations in a complete fermentation cycle.The equipment operates stably in the high temperature and high humidity environment of the cellar,and the data transmission is timely and accurate;during the fermentation cycle,the carbon dioxide reaches a peak value of 38.05%vol on the 11th day of fermentation,and then decreases and stabilizes at about 2%vol;the methane content rises slowly,and reaches a peak value of 39.92%vol on the 127th day of fermentation;the results of the present research provide an opportunity to control the greenhouse gases in solid-state fermentation of Baijiu and to realize energy saving by rationally utilizing fermentation waste gases.The results of this study provide data support for the effective control of greenhouse gases in solid-state fermentation of Baijiu and the rational use of fermentation waste gas to achieve energy saving and emission reduction.
