竹叶青酒是以汾酒为基酒,添加 12 种名贵中草药的浸提液配制而成的露酒,本文利用顶空固相微萃取(headspace solid phase microextraction,HS-SPME)结合全二维气相色谱/飞行时间质谱(comprehensive two-dimensional gas chromatography-time-of-flight mass spectrometry,GC×GC-TOFMS)技术,在竹叶青酒所用的12 种药材中共检测出1707 种挥发性成分,其中 547 种化合物具有香气特点,表明竹叶青酒所用药材挥发性组分具有多样性和复杂性的特点.通过文献和网页检索,已确定其中80种为生物活性成分,而百里酚、大根香叶烯D、丁香酚、反式石竹烯、甲氧基肉桂酸乙酯等 13 种生物活性成分在本次实验的 12 种药材中均可被检出.本研究为进一步深入研究竹叶青酒的风味特征、竹叶青酒的健康功效提供了理论基础及科学依据.
Analyze the Volatile Components of 12 Medicinal Materials of Zhuyeqin Liquor With Comprehensive Two-dimensional Gas Chromatography/time-of-flight Mass Spectrometry
Zhuyeqing Liquor based on Fenjiu is a famous traditional Chinese functional liquor(also belonging Lujiu),comprised of 12 precious Chinese herbal mix extracts,such as Angelica,tangerine peel,Gardenia jasminoides Ellis,et.al.The volatile components analysis of 12 kinds of herbs used in Zhuyeqing Liquor can help to clarify the flavour characteristics and health value of Zhuyeqing Liquor.In this paper,headspace solid-phase microextraction(HS-SPME)combined with comprehensive two-dimensional gas chromatography/time-of-flight mass spectrometry(GC×GC-TOF/MS)was used,and a total of 1707 volatile components were detected in 12 medicinals used in Zhuyeqing Liquor,in which 547 compounds with aroma characteristics,indicating that the volatile components of these materials used in Zhuyeqing Liquor were diversity and complexity.Through further search,about 80 kinds of healthful compounds have been identified,and 13 compounds such as thymol,germacrene D,eugenol,trans-caryophyllene,and ethyl methoxycinnamate et.al.have been found in all 12 kinds of herbs.This study provides a theoretical and scientific basis for further in-depth research into the flavour characteristics and the health effects of Zhuyqqing Liquor.
