随着现代微生物检测技术的日益成熟,白酒相关领域的微生物信息研究发展迅速.白酒的酿造过程与微生物的新陈代谢密不可分,因此识别并建立白酒酿造微生物菌种数据库是探索白酒酿造过程的基础.浅析了几种微生物的检测方法并介绍一种新型微生物识别技术-基质辅助激光解吸电离飞行时间质谱(MALDI-TOF MS),旨在为白酒酿造微生物的识别鉴定和菌种数据库的建立提供简单高效的手段.
Feasibility Discussion on the Identification of Baijiu Brewing Microorganisms Using MALDI-TOF MS Technology
With the increasing maturity of modern microbial detection technology,the research on microbial information in the field of Baijiu has developed rapidly.The brewing process of Baijiu is inseparable from the metabolism of microorganisms,so the identification and establishment of a database of microbial strains in Baijiu brewing is the basis for exploring the brewing process of Baijiu.In this paper,the detection methods of several microorganisms are briefly analyzed,and a new microbial identification technology,matrix-assisted laser desorption ionization time-of-flight mass spectrometry(MALDI-TOF MS),is introduced,which aims to provide a simple and efficient means for the identification of microorganisms in Baijiu brewing and the establishment of strain databases.
