本文首先探讨新疆各地考古发现的先秦至唐代时期的遗址、墓葬出土的农作物,印证了新疆古代先民丰富多样的饮食文化.其次,探析吐鲁番市阿斯塔那墓地发现的农作物及其制作的面食、水果遗存以及相关纸质文书,有力证实了晋唐时期的吐鲁番居民已从事农业、园艺业和与饮食相关的手工业,揭示了吐鲁番先民多样化的饮食构成以及中原饮食文化对新疆的影响,从而彰显了新疆饮食文化是中华民族饮食文化的重要组成部分.
Abstract
This paper first discusses the crops unearthed from the archaeological sites and the tombs of the Pre-Qin to Tang Dynasties in Xinjiang,which reflects the rich and varied diet culture of the ancient ancestors in Xinjiang Province.In addition,the analysis of the remains of the crops,pasta,fruits and related paper documents found in Astana cemetery in Turpan City strongly confirms that the residents of Turpan in the Jin and Tang Dynasties were engaged in agriculture,horticulture and food-related handicrafts,but also revealed the diversified diet composition of the ancient ancestors in Turpan,and the influence of the dietary culture of the Central China on Xinjiang,thus demonstrating that the dietary culture of Xinjiang was an important part of the Chinese food culture.
