开发了一种新型的双电性β-甲壳素纳米纤维。首先,以部分脱乙酰化的β-甲壳素为原料,经过TEMPO/NaClO2/NaClO氧化在其表面修饰上羧基官能团,然后再对其碱处理脱除乙酰氨基形成氨基,最后经过超声离心后获得了双电性β-甲壳素纳米纤维。该纳米纤维在酸性和碱性条件下良好的分散,具有广泛的pH稳定范围。通过调控双电性β-甲壳素纳米纤维表面电荷电离程度,纳米纤维在碱性条件下对环氧大豆油表现出了良好的乳化效果,展现了作为Pickering乳化剂的应用潜力。
Preparation of Zwitterionic β-chitin Nanofibers and Its Application in Pickering Emulsion
In this study,a novel zwitterionic β-chitin nanofiber was developed.Firstly,the partially deacetylated β-chitin was subjected to TEMPO/NaClO2/NaClO oxidation and car-boxyl groups were introduced into its surface,followed by alkali treatment to remove the acetylamino groups on chitin to form amino groups.Finally,after ultrasonic and centrifugal treatment,the zwitterionic β-chitin nanofibers were obtained.The nanofibers can be stably dispersed under acidic and alkaline conditions,which indicates that it has a good stability in a wide pH range.By modulating the degree of charge ionization on the surface of the zwitteri-onic β-chitin nanofibers,the nanofibers showed good emulsification of epoxidized soybean oil under alkaline conditions,demonstrating its potential application as Pickering emulsifier.The development of this novel zwitterionic β-chitin nanofiber is helpful to promote the appli-cation of chitin nanomaterials.
