食用菌富集重金属主要特征与相关机制研究进展

食用菌产业是中国乡村经济发展与农民增收的重要支柱产业之一,近年来其产量与产值都呈现快速增长趋势,已经成为全国继粮食、蔬菜、果树、油料之后的第五大产业,尤其是食用菌工厂化生产位居全球前列,其生产总量占世界同类食用菌产品43%.在食用菌产业转型发展与质量升级过程中,有效防控产品重金属污染无疑是重要的生产实践命题.本文综述了食用菌产业发展成效与重金属污染现状,重点分析了食用菌重金属污染的主要特征及其评价研究进展;分类总结并阐述了食用菌重金属富集的相关机制,并结合生产实际,提出了防控食用菌重金属污染危害的技术对策,主要包括新品种选育、新配方开发、新模式栽培、新机制探讨与新技术应用等,着力构建食用菌绿色生产与经营管理的技术体系.
Advances in Research on Characteristics and Related Mechanisms of Heavy Metal Enrichment by Edible Fungi
Edible fungus industry is one of the important pillar industries of rural economy development in China.In recent years,its output and output value increased rapidly,has become the fifth largest industry following food,vegetables,fruit trees,and oil.Edible fungus factory production in China is in the forefront of the world,accounting for 43% of the total production of the world.In the process of edible fungus industry development,the prevention and control of heavy metal pollution from edible fungus is undoubtedly an important proposition.This paper reviewed the status of development and heavy metal pollution about edible fungus industry.The main characteristics of heavy metal pollution of edible fungi and its evaluation were analyzed.The heavy metal enrichment mechanism of edible fungi was summarized.Finally,the technical countermeasures to prevent the heavy metal pollution of edible fungus were putten forward.The contents of the countermeasure include breeding,recipe development,cultivation pattern,mechanism study,technology application and etc.
