Comparative study on nutritional quality of the second-year early-maturing and late-maturing strains of adult Chinese mitten crab Eriocheir sinensis after five generations of selective breeding
This research was aimed to compare the edible yield,proximate composition,coloration,and total carotenoid content of early-maturing(EM)and late-maturing(LM)strains of adult Eriocheir sinensis after five generations of selective breeding,and the individuals without selection were served as the control.The results showed that:(1)The average body weights of crabs in the EM and LM groups were significantly higher than the control group(P<0.05).The highest value of gonadosomatic index(GSI)and hepatosomatic index(HSI)was observed in the EM and LM groups,respectively,but no significant difference was observed between the groups(P>0.05).(2)In terms of proximate composition,crude fat content in the gonads of female crabs of the EM group was significantly higher than that of the LM group(P<0.05),and the crude fat and ash contents in the hepatopancreas of both male and female crabs of the EM strain was also significantly higher than the LM group(P<0.05).(3)No significant difference was observed in L∗,a∗,and b∗ values and total carotenoid content of hepatopancreas and carapace,and the only significant difference was observed in L∗ values of the female gonads that the control group was significantly lower than the EM and LM strains(P<0.05).The results indicated that selective breeding based on gonad development speed and growth performance had little effect on the nutritional quality of E.sinensis.
