Analysis of Primary Nutritional Composition in Muscle of Wrasses Cheilinus trilobatus and C.fasciatus
In order to clarify characteristics of the muscle quality and nutritional composition of wrasses Cheilinus trilobatus and C.fasciatus,the contents of proximate nutritional composition,amino acids,fatty acids and some of minerals were analyzed and evaluated in muscles of cultured C.trilobatus with body weight of(166.8±13.6)g and C.fasciatus with body weight of(316.1±43.7)g by biochemical methods.The results showed that there were(79.01±0.35)%of moisture,(18.42±0.86)%of crude pro-tein,(1.11±0.20)%of crude fat and(1.11±0.25)%of crude ash in the muscle of C.trilobatus.A total of 16 amino acids,accounting for 79.05%,in the total content of dry muscle tissue,were detected,including 32.81%of essential amino acids,30.47%of flavor amino acids,with the first limiting amino acid of valine(Val),and the second limiting amino acid of methionine+cysteine(Met+Cys).Fifteen types of fatty acids were detected,including 5 saturated fatty acids(43.9%),3 monounsaturated fatty acids(17.1%)and 7 polyunsaturated fatty acids(39.0%).The macronutrient potassium and the trace element zinc were a-bundant at 4.10 × 103 mg/kg and 4.30 mg/kg in the 8 minerals.The C.fasciatus contained(80.42±0.65)%of moisture,(18.20±0.52)%of crude protein,(0.72±0.49)%of crude fat and(1.19±0.18)%of crude ash in the muscle.The detected 16 amino acids accounted for 84.18%of the total content of dry mus-cle tissue,including 34.22%of essential amino acids,and 32.55%of flavor amino acids,with the first lim-iting amino acid of methionine+cysteine(Met+Cys),and the second limiting amino acid of valine(Val).A total of 16 fatty acids were detected,including 5 saturated fatty acids(41.1%),4 monounsaturated fatty acids(13.0%)and 7 polyunsaturated fatty acids(45.9%).In the 8 minerals,the macronutrient potassium and the trace element zinc were abundant at 3.53 × 103 mg/kg and 6.80 mg/kg.It was found that the essen-tial amino acid composition was reasonably balanced,rich in fatty acids and high in minerals in Cheilinus trilobatus and C.fasciatus.The finding provides nutritional theoretical basis for the promotion of the cul-ture and diversification of the processing and utilization of C.trilobatus and C.fasciatus.
