大竹县不同香椿品种的营养品质分析

为评价大竹地区不同香椿品种嫩芽的营养品质,筛选出营养丰富、满足不同需求的品种,为香椿育种和栽培提供参考。测定8个香椿品种的营养成分,对其营养品质进行了综合分析。结果表明:不同香椿品种的可溶性蛋白、可溶性糖、脂肪和维生素C含量差异明显,其变幅依次为5.22 mg.100 g-1~8.30 mg.100 g-1,0%~4.32%,0.60%~9.57%,53.80 mg.100 g-1~113.00 mg.100 g-1。综合营养品质最好的品种是红香椿,营养品质最差的是褐香椿。
Nutrition Quality Analysis of Different Toona sinensis Cultivars in Dazhu County
To screen Toona sinensis(TS)cultivars which can meet requirements for different nourishment and provide references for TS breeding,the nutrition quality of 8 TS cultivars were evaluated by measuring the nutritious parameters including soluble protein,soluble sugar,fattiness and vitamin C.The fruits of different Toona sinensis cultivars contained significantly different nutrient contents,ranged from 5.22 mg·g-1~8.30mg·g-1 in soluble protein,0%~4.32% in soluble sugar,0.60%~9.57% in fattiness,53.80 mg·g-1~113.00 mg·g-1 in vitamin C.Among the cultivars evaluated,Hongxiangchun exhibited excellent nutrient quality with highest evaluation index of 13 and Hexiangchun reverse with poor score of 8.The significant difference among these TS cultivars indicated that there was great potential to improve the nutritious quality of TS by breeding.
