Research Progress on the Extraction and Health Function of Water-soluble Polysaccharides from Millet Bran
Millet bran is a mixed byproduct produced during the refined processing of millet,which is rich in various nutrients and active substances,such as polyphenols,polysaccharides,dietary fiber,lipids,proteins,etc.This resource is often used as animal feed to feed livestock or as fertilizer to cover farmland,resulting in the waste of this byproduct.At present,the research on water-soluble polysaccharides in millet bran is still in its infancy.Therefore,this article summarized the latest research progress on the main extraction techniques of water-soluble polysaccharides from millet bran(such as hot water extraction,enzymatic extraction,ultrasonic extraction,etc.)and their health functions(such as hypoglycemic,immune regulation,antioxidant,etc.),aiming to improve the utilization rate and added value of millet bran resources,and also provide some reference for the development of related functional products.
