Study on the Changes of Physicochemical Indexes and Antioxidant Activity of Blueberry Enzymes during Aging
In order to explore the changes of antioxidant activity of blueberry enzymes during the aging process,blueberry enzymes with different aging times were taken as the research objects,and the DPPH free radical,ABTS+free radical and superoxide anion free radical scavenging capacity were used as antioxidant indexes,their changes of antioxidant capacity were studied and the physical and chemical indexes such as total phenols,organic acids and pH value were determined.The results showed that the pH value and total phenol content of blueberry enzyme both increased with the extension of aging time(P<0.05),and the citric acid content increased first and then decreased;the DPPH free radical scavenging capacity and ABTS+radical scavenging ability increased first and then stabilized,while the superoxide anion scavenging capacity increased gradually.The correlation analysis showed that the total phenolic content was positively correlated with DPPH radical,ABTS+radical and superoxide anion scavenging capacity(P<0.05)and showed a significantly positive correlation with pH value(P<0.01).This research can provide guidance for the production and development of blueberry enzymes in order to optimize the production process,improve product quality and promote product innovation.
